The gap between policy and practice is where most food systems stumble. A council can pledge to source locally, but if its procurement rules still favor the lowest bidder, the small farm never stands a chance. A supermarket can champion regional produce, but if its ordering system demands volumes no single grower can meet, the promise quietly falls apart.

Slow Food Movement gradually took shape as a counterpoint to the industrialized food system. Its guiding philosophy as “Good, Clean, Fair” which has given rise to a diverse ecosystem of business, including small-scale organic farmers, artisanal food producers and local restaurants.
